Chocolate Thumbprint Cookies

How can I convince you that these sweet almond vanilla sugar cookies melt together so perfectly with a chocolate center? Was that convincing enough?

Chocolate Thumbprint Cookies

Ingredients

• 1 cup salted butter, softened to room temperature
• 55 grams cream cheese, room temperature
• 200 grams white sugar
• 1 egg, room temperature
• 1 tsp. vanilla extract
• 1 tsp. almond extract
• 375 grams all purpose flour
• 1/2 tsp. salt (or 1/4 for a less salty flavor)
• 1 1/2 tsp. baking soda
• 1/2 cup sugar for rolling cookie dough in
• 24 -30 chocolate candies

Instructions

1. In a stand mixer add your butter and cream cheese. Mix until combined completely. (1-2 minutes)
2. Add in your sugars and mix again another 2 minutes. Next add in your eggs and extracts and mix until combined, about another minute.
3. Add in flour, salt, and baking soda. Pulse and lightly mix in dry ingredients until just incorporated. Do not overmix.
4. Roll cookie dough into balls and then roll and coat cookie dough in sugar. Place dough balls on cookie sheet, cover completely and let sit in the fridge for at least an hour before baking.
5. Preheat oven to 350 degrees.
6. Bake cookies for 10 minutes.
7. Once cookies come out of the oven, immediately press chocolate into the center of each cookie.
8. Let cool completely and enjoy!
9. Store in airtight container for up to 3 days.
